Exsum Ancestral 2015. Julia Bernet, Penedes
Xavi and Cristina Bernet had always been farmers in the region of High Penedes. In 2003 they decided to go back to Xavi’s grandfather vineyards and produce their own sparkling wines and to stop selling the must to the Cava cooperatives. Located in El Pago-Subirats Penedes, 300-400 meters altitude and surrounded by Mediterranean forest, Mountains vineyards. They have in total of 7 hectares organic certified since 2008. In the vineyard they don’t use of any pesticides or herbicides, they use horsetail herb to prevent mildew and sheep compost from the local farmer. In the winery spontaneous fermentation with indigenous yeast and minimum doses of sulphites.
