Gin Nautilus (seaweed Gin), produced in Evora in an artisan distillery by Joao Malhero and his team. The alcohol is made from sugar cane with triple distillation. Thirteen botanicals are mixed in before the third distillation, including coriander seed, citrus peel, root of angelica, juniper with the principle component being Sea Lettuce which gives the gin its unique delicate marine scent and flavour. The mixture is macerated and distilled for the third time. Sigar cane alcohol is important to giving a delicate profile to the gin where the elegance of the savoury flavours is not overpowered by the spirit. Evora is a historic town in the south of Portugal in the region of Alentejo dating back to pre-roman celtic times.
